Ponche It Up!

Real rum connoisseurs need neither rhyme nor reason to enjoy a good rum. Well, what about a song? It’s beginning to look a lot like and it’s around that time to “Drink ah rum and a Punch a crema”. Not many drinks can boast about being mentioned in a song but the beloved Ponche de Crème aka “Puncha ah Créme” has, decisively earned its place in the hearts and taste buds of many.

Usually prepared at Christmas time in Trinidad and with slight variations in other islands, Ponche de Crème is a version of traditional Eggnog, a sweetened milky drink, but with a seriously generous dose of rum and brandy. The deceptive sweetness of this drink mingled with cinnamon and citrus flavours will make you want to sip and sip. Don’t be fooled, you will quickly feel the punch in the Ponche!

Mount Gay has shared some of its favourite recipes to pack that punch for the season’s festivities. Read, be inspired, and sip till you dip! 
Trinidad Style Ponche-A-Créme
3 eggs
Peel of (1) lime
2 cans of condensed milk
1 can of evaporated milk
2 tsp. nutmeg
1 tsp. Cinnamon
1 tsp. Clove
1 oz. vanilla essence
½ oz. Aromatic Bitters

In a mixing bowl, beat the eggs with the lime peel for about three minutes, remove the limepeel and add all other ingredients. Mix well, and chill for one hour before serving.

 Style Ponche-A-Créme
2 eggs
Peel of (1) lemons
Peel of (1) small lime
15 oz. sweeten condensed milk
12 oz. Cream of coconut
33 oz. vanilla flavored milk
12 oz. falernum
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1 oz. almond essence

In a mixing bowl, beat eggs with lemon and lime peel until light and fluffy, remove the peel and add the coconut cream, evaporated milk and vanilla flavored milk, continue to mix until smooth, then add all other ingredients and mix well, and chill for two hours before serving.
